Grind all the above to powder. A coffee grinder set to fine, if available, is ideal. The traditionalists among you should acquire a Pestle and Mortar for this task. Those with less traditional minds could simply place all spices in a strong, clean, cloth bag, and 'bash' with a wooden hammer or rolling pin :-)
Store bought Curry Powder is expensive and differs in strength from brand to brand. The above will make a fairly mild curry powder. Increase the peppers, ginger, and cloves, for a more aromatic, spicier mix.
Cumin is the spice which gives curry it's 'curry' taste, and is the most Indian of spices. Coriander has a mild citrus flavour. Turmeric will stain everything Bright Yellow, including skin! Chili peppers, dried and powdered, will add 'heat' and pungency.
Keep notes as you experiment with differing quantities. Then once you have the perfect 'balance' for your taste it will be easier to repeat for each following batch. Brought to you from 'Ron's Plaice' :)
