1 Melt the chocolate in a bowl over a pan of gently simmering water until melted, stirring occasionally. Slice the panettone and chop each into bite size pieces. Drizzle chocolate over each, place on a cooling rack and leave to set for 15-20 minutes.
2 Put the mascarpone into a bowl, add the golden icing sugar and brandy, to taste. Serve the panettone with a little bowl of the golden mascarpone.
